This is an algorithm based on a pasteurization curve for heat to effectively sanitize. When the temperature reached 165° F the heat effect for killing bacteria reaches a maximum point and higher temperatures do not equate to a higher sanitization effect. Therefore, hotter is only better up to that point. Increasing heat beyond that adds no additional value. Temperatures in a dishwasher can and will go above 165° F but the HUE value assigned with remain at 346.8 for each temperature reading at or above 165° F. |
